Quinoa, Lentil & Bean Salad
This was a quickly thrown together dish for dinner tonight, just using what I had to hand. It was a hearty salad with a lovely fresh dressing and lots of lush green coriander.This is my entry for this month's No Croutons Required. The challenge this month was to make a mexican style salad or soup. My salad isn't particularly authentic, but it gives a nod to mexican cuisine and it is very yummy. If you want to join in, you have until tomorrow evening to submit an entry.
Quinoa, Lentil & Bean Salad
250g prepared black beluga lentils
250g prepared quinoa
240g prepared kidney beans
2 large ripe tomatoes, diced
2 large avocadoes, diced
1 large handful fresh coriander, chopped
dressing
juice of ½ lime
6 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp wholegrain mustard
1 tsp dried chilli flakes
freshly ground black pepper
There's not much in the way of preparation. Toss the avocado in some lime juice before adding to the salad, to prevent it from browning. Apart from that is just one of those salads, where you throw everything in and then toss in the dressing.

First Post Christmas Bake-up.

Oh, and I was doing so well! Leftover lemon quinoa from last night's tea mixed with sprouted hempseeds and green lentils, kalamata olives, radish slices, diced pickles and chiffonaded lettuce. Perfect healthy lunch...
Even better with the addition of a heap of lemon mayo and southern-fried tofu! So so good - I love tofu so much and this is just my favourite way to cook it. No marinade necessary just some pressed tofu dusted in Tex's original fried chicken coating and shallow-fried quickly in some vegetable oil.

Tex, this magical powder might have been intended for chicken, but I think it's found its soulmate in Cauldron firm tofu!
As me and the chitterlings have been housebound due to snow and lazyitis for the last week, I decided a little baking project was in order. Double chocolate candycane muffins. I armed my two little savages with rolling pins and set them loose on a bag of leftover xmas candy canes and chocolate santa butt.

Some serious mixing later - I'll be finding cocoa-sugar grit in the cracks and grooves of the table for weeks to come! - and our muffins were about ready to go in the oven. 25 minutes later and they were lovely and chocolately and minty and chewy - the kids had two each!
We're going to take some for a playdate tomorrow - hopefully they'll go down well with our friends too!
